Just to be clear, this result is not me eating carnivore. This is me allowing myself to eat 20% of my diet from foods not considered keto or carnivore. When I say that, I mean things that may be cooked in seed oil, bread, or sometimes sugar. I stay as close to keto as possible with all that has been happening in my life. I would hear people tell me, "A little won't hurt you." For me, it hurts a lot. As you can see in my HbA1c results from Everlywell, I am right in the middle. I could go either way. It really depends on my and my choices. Red is diabetes and Green is optimal health for me. 

I check my glucose often and I am usually in the 70-90 range. I honestly was shocked to see this result. I wish I had done this when I was strict keto. I decided to test my inflammation, glucose and my thyroid before I do Carnivore Level 1. I will not cheat or stray. I will be strict and will share on my Instagram what I am eating and drinking. It may get very boring. I will eat beef (nose to tail), Redmond Real Salt, and water. I will drink bone/meat broth in place of my usual coffee. 

I am not saying it will be easy, but it will be worth it. Once I am done, I will retest to see where my markers are. You are welcome to follow along. I am a 48 year old woman who is menopausal and I suffer from hypothyroidism. I do not believe keto healed that for me. It healed a lot, just not that. I have a metabolism test I need to take before I start as well and will get results for that. My temperature runs at around 97.4. I feel that is low and part of my problem. 

I am happy I have these tests to measure something besides weight. I feel everyone should see where they stand. Seeing this makes me realize even more that I have important decisions to make. I want to lean towards optimal health. I truly believe eating carnivore will lead me on that path. I will start with beef, then move to level 2 and so on. I will document my journey. I know no one's path will be the same, but I believe a wholesome way of eating has a positive result for most of us. 

I will start the 30 days soon. I wanted to be realistic and make sure I have everything I need to stay the course. I want REAL results. I want to be strong and healthy once again.

Why do 30 days of beef?

If you read my about page you know I have been following a ketogenic way of eating since January, 2018. Keto saved me from having my wrist cut open for carpal tunnel surgery. When I started I was afraid I was going to blow my heart up. I had been salt shamed since my mid-20's and ended up on blood pressure meds, anti-depressants and more. I developed acne, depression, IBS, high blood pressure, and cried often. I have written a book about the thought of taking my life behind an oak tree. I may share it one day, not sure yet. It is deep and full of raw emotions. I know a lot of us feel lost like that. That is why I am here. 

When I searched anti-inflammatory diets I found keto. I went to the library and checked out any info and cookbook I could find on the ketogenic diet. I was eager to start to see if I could cancel my surgery. It did not take long to feel the effects of keto for me. My face started to change and all of that inflammation started to leave my body. I did not lose as fast as some people and told myself to be patient. I am NOT a patient person. I noticed my blood pressure started to drop within a few weeks and I ended up coming off the blood pressure meds. I then had to do something that scared me to death, eat more salt. I quickly realized that sugar was the enemy all along, not the meat, fat, or salt. I could not believe my eyes when I saw my blood pressure that was usually 140/90 on meds compared to 117/76 eating a ketogenic diet and no meds. I hate calling it a diet, it is simply a lifestyle. 

I did lose 61 pounds in 11 months. I went from 251 to 191 and that is where it all went wrong for me. I won't go into detail except to say I ate candy from my child's Halloween bag. Snickers got the best of me. I would do good for 2 weeks and slip up to my sugar addiction again. I made it to ONEderland and I started screwing it all up. I realized I was peri-menopausal, and now menopausal at this point. I am 48 and all of this started at 42. I recently found out I suffer hypothyroidism. I also saw my inflammation markers and want to share it with you. You can see my test results at Everlywell. I want to be an open book and show you how this is going for me. Keto saved me but I see my path going into Carnivore Land. I was going to do level 3 but feel I want to try level 1 to start to heal my thyroid. I also want to see if eczema is affected, It is the one thing I did not see improvements on during keto.

​I am planning to take a Metabolism test soon as well as HbA1c. I also want to do a Calcium Scoring Test. It is my hope to see these numbers improve as I do 30 days of beef. I will start on January 1st and hope you will follow along. I am currently eating keto. I am removing certain things as I prepare myself and fill my freezer with beef. I have a large family so I need to prepare myself.
